Place your iPhone into "airplane mode" and reconnect to the car.

Now, take a listen to see if the noise goes away while playing a song. If it does go away then it is most likely RF (or similar subsytem) interference eminating from the iPhone.

One cure would be to filter the line out cable or otherwise modify an apple av cable to connect to bottom of iPhone instead of using headphone jack.
