Personally, I like it slow-cooked to softness... Seared soft makes it just rubbery, but slow? Why have steak when you have bacon? Actually, why not both?
Also on a drunken dare, I've had raw bacon. Just as a PSA, it's cooking it that brings out the flavor; it wasn't anything to write home about.

Went to the "beer battered bacon" restaurant tonight and had meatloaf wrapped in bacon. Served on mashed taters with Hefeweizen gravy. Delicious. Paired it up with a great double IPA and had fresh pretzels with cheddar dip and very tasty mustard for an appetizer.
