If you want to see what the actual oil temperature is you can do so via the hidden menu. ( haven't got the link to it but I posted how to do it on the 5 series g30 forum here)
That will enable you to see both coolant and oil temperature at the same time and you will see that the oil temperature follows the coolant as the car warms up.
The active shutters will be closed as well during that stage to help the car warm up and get to operating temperature.
