This is a good question and makes sense since price points can overlap depending on which years and new vs used etc. I think, based on your intended use, would go for a Turbo S. They tend to depreciate a little faster at first, so you could pick up a 991.1/2 for a fairly reasonable price if willing to buy used. Like said above, a Turbo will be a little more comfortable but I’ve ridden in GT cars that seem very civil as well. If you need creature comforts, you want the Turbo. If you want bare bones, light car that may not always fit your driving need, then go GT3. I have a 718 Spyder on order which would cost about the same as a 991.1 Turbo or GT3 and might be something you’d consider (or GT4).
