It's not different other than the wing delete and what options are available (ie leather only, no clubsport). Oh and it sounds slightly different because they had to redesign the air box a bit for packaging reasons.
While I agree that the Turbo is more daily-driver, the GT3 can do the job as well just fine. Particularly if you outfit it with PDK and non-bucket "sofa" seats.
