Once he loads the software on your system, he can show you how to return it back to stock if needed. It's a 15 minute process to flip between stock and tune.
Personally, I've never switched back to stock for routine maintenance or minor warranty issues. Never on any of my BMWs. They only check when there is a major issue. Even then, it's not detectable during basic diagnosis.

Thanks so much for your input it was very helpful. Although my car is a 2016 I came over here because I didn't find any info on the forum for the 2016 + cars. I am going to sell my Burger JB4 N63tuf. which was never installed and still in the box. I will be going the same way you did with the stage 1 tune. Again thanks
