Yes the mirrors will fold. ID6 is basically ID5 with a new skin (hardware is identical) so nothing is really changed saved the main menu appearance. Even though 2018 and 2019 cars came with ID6, I don't think the dealer would do it for you, because updating the software alone doesn't change the appearance (unlike Windows or IOS). Many people on this forum have coded their vehicles without affecting the warranty. The process is easily reversible anyway.
